Cooking Tip: Due to Bison's lack of Intra-Muscular fat, Bison roasts/steaks should be cooked to Rare or Medium-Rare Only. Ground Bison for Burgers and Meat Loaf benefit greatly with the addition of  some ground beef (70% lean) and can be cooked beyond the suggested doneness for roasts and steaks.
